YIELD: Serves 2
	Per portion:
		GI:	0
		GL:	0

		Calories: 164; Carbohydrates: 7g; Fiber: 3g; Protein: 12g; Fat: 9g;
                       Saturated Fats: 0g; Sodium: 273mg.

INGREDIENTS:
•	½ head of Cauliflower, rinsed and chopped into 1 inch floweret’s – 2 cups
•	1 Large Fresh Tomato, rinsed and chopped 
•	¼ cup Mozzarella Cheese – shredded
•	1 Extra Large egg, beaten
•	¼ cup Parmesan Cheese – grated
•	1 Tbsp Extra Virgin Olive Oil

PREPARATION:
      1.   Spread Extra Virgin Olive Oil over bottom and sides of 6 x 8 inch glass baking                dish.
      2    In a medium sized bowl, beat egg and add cheeses, stirring until combined.
      3.    Arrange cauliflower and tomato in baking dish. 
      4.    Pour egg and cheese mixture over cauliflower/tomato combination.
      5.   Bake in 325 degree oven for 20 minutes.</description>

		<description>Foods to avoid?  Right off the bat, I would have to state the obvious, foods that have a high sugar content.  Also avoid foods that have a high carbohydrate count as the carbs ultimately turn into sugar.  Avoiding sugar altogether though, can be dangerous as well, so try and look for foods that have a low sugar content and a low carbohydrates content.  I&#039;ll do some more research on the matter and write an article about foods that diabetics need to avoid.</description>
